Bar Manager

We are looking for an energetic and experienced Bar Manager to oversee the daily operations of our bar. The ideal candidate will be organised  and dynamic, a good team player with a  passion for  seasonal ingredients and ethical sourcing. 

The Duke Organic is Britain's organic pub, certified by the Soil Association since 1998, and became part of The Culpeper Family in 2019. We believe in championing seasonal and organic produce, responsible sourcing and making a positive impact on people and planet. 

Responsibilities & requirements: 

  • As part of the Management team you must be able to stop, look and be critical of what we do;  so we can continuously improve,  grow &  reach our goals.
  • To lead the day to day running of the bar and to assist the other management in running the building
  • To assist the groups bar manager in maintaining a wet GP of 70%
  • To aim as near to 100% yield as possible
  • To bring exciting and good products to the bar 
  • To facilitate the A/GM with create well thought out and interesting daily brief sheets
  • To support the immediate bar team and with GBM set realistic goals for progression
  • To conduct quarterly reviews, target set for the team and ensure the team has the tools to hit their targets.
  • To liaise closely with the GBM and GM on the outcome of these reviews and the ongoing performance of the bar team.
  • To cash up and close in the evenings and to open the bar in the mornings.
  • To do the weekly bar orders
  • To conduct monthly/weekly stock takes and provide written reports within 24 hours of Auditor reports
  • To ensure POS/back of house and accountings is up to date weekly.
  • To ensure a clean bar area adhering to conditions set by EHO and Food Alert
  • To ensure new staff are trained according to the steps set out in the service manual
  • Able to run all FOH departments contributing to the planning and delivery of the normal week’s trade and events.
  • Upholding our food hygiene & health and safety policy 
  • Remaining until the end of the shift to ensure the safety of staff, guests and the building.
  • Enforcing practice of stock rotation, control & labelling of food as a daily standard, to ensure our compliance with food safety regulations and support the  setting up, enforcing and following of Check 65.
